Hummus Ingredients:
- 1 can (15 oz) chickpeas, 2-3 tablespoons liquid from the can reserved, then drained and rinsed
- 1/4 cup fresh lemon juice (about 1 large lemon)
- 1/4 cup tahini (sesame seed paste)
- 1 small garlic clove, peeled
- 2 tablespoons extra-virgin olive oil, plus more for serving
- Salt and pepper to taste
Hummus Directions:
- Place all ingredients in a food processor, and blend for a few minutes until very smooth and creamy. Season to taste with extra salt and pepper as needed.
Tzatziki Ingredients:
- 1 cup whole milk, unsweetened plain yogurt or labneh
- 1 clove garlic, peeled and finely minced
- 1 small Persian (thin-skinned) cucumber, grated and squeezed dry with a towel
- 2 tablespoons chopped fresh mint
- 1 tablespoon fresh lemon juice
Tzatziki Directions:
- In a small bowl, stir all ingredients until well combined. Season to taste as needed.
Dip Ingredients:
- Hummus (recipe above)
- Tzatziki (recipe above)
- ½ cup halved cherry tomatoes
- ½ cup thinly sliced Persian cucumbers
- ½ cup pitted Castelvetrano olives, roughly chopped
- ½ cup roughly chopped roasted red peppers
- ¼ cup chopped fresh herbs (try basil, parsley, chives or a combination of your favorites)
- ½ cup crumbled feta cheese
- 1 tablespoon fresh lemon zest (optional)
- Salt and pepper to taste
- Pita, crackers, cut veggies, crackers or whichever dipping accompaniment you prefer
Dip Directions:
- On a large, flat platter, spread the hummus in an even layer up to the edges.
- Spread the tzatziki over the hummus, leaving a small border of hummus at the edges.
- Evenly sprinkle over the tomatoes, cucumbers, olives, roasted peppers, herbs, feta cheese, lemon zest and a bit of salt and pepper to taste.
- Serve immediately with accompaniments, or chill for 2-3 hours before serving.
Recipe Notes: You can use store-bought versions of the hummus and tzatziki for an even quicker recipe. If you have any dip leftovers, you can stir the whole mix through some cooked grains (quinoa or rice work well) for a whole new dish.
