Imagine the iconic Italian dessert tiramisu—which translates to “pick me up” and emerged in the Veneto region during the 1960s as an indulgent combination of coffee-soaked ladyfingers and mascarpone—reimagined as a wholesome breakfast or snack that still tastes like dessert. This healthy twist transforms the Italian classic into a nourishing pudding perfect for fueling busy days. Creamy oats provide sustained energy, thanks to beta-glucan fiber, which supports heart health and helps stabilize blood sugar levels. Chia seeds bring omega-3 fatty acids to the mix, along with protein, fiber and essential minerals like calcium and magnesium. They also create that signature pudding texture as they absorb liquid and expand. Meanwhile, raw cacao powder delivers the deep chocolate notes reminiscent of traditional tiramisu while providing antioxidant flavonoids and a natural mood boost.

Ingredients:
- 1 cup rolled oats
- ½ cup chia seeds
- 1 cup coconut milk (or swap in the milk or non-dairy milk of your preference)
- 2 shots of espresso (or the same amount of coffee, or decaf espresso or coffee)
- ¼ teaspoon ground cinnamon
- 1 tablespoon vanilla extract
- 1/8 teaspoon salt
- ¼ cup maple syrup (or the same amount of coconut sugar, honey, or brown sugar)
- Cacao powder to serve (or swap in cocoa powder)
Directions:
- In a food processor or blender, blitz the rolled oats until they turn into a fine powder. Add the remaining ingredients except the cacao powder, and blend well until totally combined.
- Let this sit for 5 minutes, then blend again to ensure the chia seeds have thoroughly dispersed.
- Divide this mix between a few individual small glasses or dishes you’d like to serve out of. Let them chill in the fridge for 45 minutes, or up to overnight.
- When ready to serve, use a fine sieve to dust the top of each dish with the cacao powder, and enjoy!
Note: You can keep the full batch of this in one big container and portion it out as needed, dusting with cacao to serve.
