Passover Date and Chocolate No-Bake Banana Bars

These no-bake bars weave together traditional ancient foods of the Middle East with the joy of modern chocolate—a fitting treat for Passover, a holiday that celebrates both memory and renewal. This recipe is as nourishing as it is delicious. Medjool dates are rich in natural sugars for quick energy, along with potassium, magnesium and fiber that support digestion and heart health. Nut butter contributes healthy monounsaturated fats, vitamin E and plant-based protein, helping balance the sweetness and keep you satisfied. Bananas add potassium, vitamin B6 and additional natural sweetness without any added sugar. Dark chocolate is rich in antioxidants called flavonoids, which support cardiovascular health, and it also contains iron and magnesium. Together, these four whole-food ingredients make a treat that is naturally gluten-free, dairy-free, refined sugar-free and genuinely energizing, something you can feel good about serving at your seder table and beyond. It’s also easy to prepare in advance, and adaptable to any health preferences (see the variations below), making it ideal for holiday entertaining. 

Serves: 6-8

Total Time: 10 minutes active time, 30 minutes freezing time

Ingredients:

  • 12 Medjool dates, pitted and halved
  • 3 tablespoons nut butter (or tahini or sunflower seed butter for a nut-free option) 
  • 1 banana, peeled and sliced into thin circles 
  • ½ cup dark chocolate, chopped (use chocolate chips if you prefer)
  • Flakey sea salt and hemp hearts to garnish (optional)

Directions:

  1. Line a small baking sheet or plate that will fit in your freezer with parchment paper. 
  2. Press the dates in a single layer, so they are touching and slightly overlapping without gaps. 
  3. Smooth the nut butter in an even layer over the dates. Arrange the sliced bananas in an even layer over the nut butter.
  4. In the microwave or a double boiler, melt the chocolate until completely smooth. Spread it in an even layer over the bananas. 
  5. Working quickly before the chocolate hardens, sprinkle over the sea salt and the hemp hearts, if using. 
  6. Freeze for at least 30 minutes before cutting into pieces and enjoying. 

Recipe Notes:

  • Check that your chocolate is certified kosher for Passover if that’s important to you. 
  • Feel free to swap in any nut butter, sunflower seed butter or tahini that you prefer. 
  • Mix a pinch of ground cinnamon and/or ground cardamom into the nut butter layer for extra flavor and health benefits. 
  • You can also top the melted chocolate with other chopped nuts, dried fruit or seeds before it hardens. 
  • These keep well in the freezer for two weeks. Bring up to room temperature for ten minutes before enjoying.
