Italian Zucchini Flatbread (Scarpaccia)

Scarpaccia, a rustic Tuscan zucchini flatbread that’s equal parts frugal farmhouse cooking and elegant summer dish, is a quick and simple recipe to prepare. Originally hailing from the coast of Tuscany, it emerged as a way to use up an overabundance of garden zucchini in high summer. Zucchini is mostly water, which makes it naturally low-calorie while still nutrient-rich. It’s a good source of vitamin C and vitamin A (especially in the skin), potassium (which helps regulate blood pressure), and manganese. It also contains the antioxidants lutein and zeaxanthin, which support eye health, plus fiber that aids digestion. Because it’s so mild and moisture-rich, it’s also a sneaky way to add volume and nutrients to baked goods like this without making them heavy. Serve this rustic flatbread alongside your favorite grilled summer proteins and salads, or use it as a vehicle for dips and spreads for a lightened-up start to any meal.  

Serves: 4-6 

Total Time: 45 minutes 

Ingredients 

  • 2 zucchini, thinly sliced into rounds, ends trimmed and discarded 
  • 1 yellow onion, peeled and chopped 
  • 4 cloves garlic, peeled and minced 
  • 2 tablespoons extra virgin olive oil, divided 
  • 1 cup flour 
  • 1/3 cup cornmeal  
  • ½ cup ground parmesan, plus more for topping 
  • 1 cup water 
  • Salt and pepper to taste 
  • Fresh herbs to garnish (optional)  

Directions: 

  1. Preheat your oven to 350 degrees. Line a half sheet pan with parchment paper.

  2. In a large skillet over medium heat, add 1 tablespoon olive oil. Add the zucchini, onion, and garlic, along with a pinch of salt and pepper.

  3. Saute for 6-8 minutes until softened and golden brown. Transfer to a large bowl.

  4. Add the flour, cornmeal, parmesan, and water to the bowl with the zucchini mixture. Stir well to combine, ensuring no dry flour patches remain.

  5. Spread this batter evenly in your prepared sheet pan, all the way up to the edges. Bake for 25-35 minutes, until firm and lightly golden brown. 

  6. Garnish with fresh herbs if desired, and enjoy warm or at room temperature.
