Greek Breakfast Bowl

Greek cuisine is one of the world’s oldest culinary traditions, and the Mediterranean diet is consistently ranked among the healthiest ways to eat. This bowl builds cornerstone Greek ingredients into something more satisfying and protein-rich for a modern morning. Cottage cheese stands in for the creamy, tangy dairy that Greeks have always loved. It’s a powerhouse base: high in protein, low in fat, and rich in casein, a slow-digesting protein that keeps you full for hours. Pair that with chickpeas, a fiber-rich legume with deep roots in Greek cooking, and you have a breakfast that delivers both complete protein and a substantial dose of fiber and iron. The cucumbers and tomatoes bring brightness and crunch, and they’re doing real nutritional work: hydration, vitamin C, lycopene, and antioxidants. A generous pour of good olive oil adds heart-healthy monounsaturated fats and helps your body absorb all those fat-soluble nutrients from the vegetables. A squeeze of lemon does double duty: it brightens every flavor in the bowl while adding vitamin C, which boosts iron absorption from the chickpeas. Feel free to meal prep a few of these for grab-and-go on busy mornings. 

Serves: 1 (easily multiplied)

Total Time: 10 minutes

 

Ingredients:

  • 1 cup cottage cheese
  • 1/3 cup chopped cucumbers
  • 1/3 cup chopped tomatoes
  • 1/3 cup cooked chickpeas
  • 1 tablespoon crumbled feta cheese (optional)
  • 1 teaspoon fresh chopped dill
  • 1 tablespoon extra-virgin olive oil
  • Fresh lemon juice, salt, and pepper, to taste

Directions:

  1. In a small bowl, spread the cottage cheese into an even layer.
  2. Distribute the cucumbers, tomatoes, and chickpeas over the cottage cheese, then sprinkle over the feta if using. 
  3. Garnish with the dill, olive oil, lemon, salt, and pepper. Enjoy!
